According to the official IMEX soft-drying method 

Fresh fruits are hand-selected for ripeness and quality

Washed, peeled, and sliced uniformly

Treated with gentle steam heat (65–70°C) to preserve flavour & colour

Slowly dried in a controlled cabinet dryer to maintain softness

Conditioned for 18–24 hours to achieve a perfect chewy texture

This method avoids over-drying, keeping the fruit juicy, tender and naturally sweet.
